Pumped Up Feta-less Greek Salad

Ingredients

  • 1 cup black beans (boiled and drained)


  • 1 cup chick peas (boiled and drained)


  • 1 English cucumber, chopped


  • 1-2 red peppers, chopped


  • 1 green pepper, chopped


  • 1 orange pepper, chopped


  • 1-2 cups broccoli, chopped


  • ½ cup grape tomatoes, sliced in half (or one roma tomato sliced)


  • ½ purple onion, thinly sliced


  • ¼ cup olives of your choice (I used a party varied)

Add fresh herbs to your taste
parley
basil
oregano 

Dressing

  • ¼ cup olive oil


  • ¼ cup balsamic vinegar


  • Juice from ½ an orange


  • ½ tsp Himalayan salt


  • ½ tsp garlic powder (omit this if using fresh garlic)


  • 1 tsp dried basil


  • Freshly ground black pepper to taste 

Directions

 

Cut up all ingredients in a large bowl. 

Put all dressing ingredients in a small jar, shake well and add to the vegetables. 

Mix well and enjoy!
