stacked cabbage salad

Ingredients

  • ½ head of green cabbage (chopped finely by hand or food processor)


  • ½ head of purple cabbage (chopped finely by hand or food processor)


  • 3 medium carrots, grated


  • 1 medium zucchini, grated


  • 1 medium cucumber, grated


  • 3 stalks of celery, chopped finely


  • 1 red bell pepper, chopped finely


  • ¼ cup chopped cilantro or parsley (or both)


  • 2-3 small cloves of garlic, finely chopped


Optional

  • ½ granny smith apple, finely chopped

Dressing

  • ½ cup extra virgin olive oil


  • ¼ cup balsamic vinegar


  • ¼ cup apple cider vinegar and/or red wine vinegar


  • ½ tsp Himalayan salt, or to taste


  • ½ tsp garlic powder (omit this if using fresh garlic)


  • 1 tsp dried basil


  • Freshly ground black pepper to taste 

Directions

 

Cut up all ingredients in a large bowl. 

Put all dressing ingredients in a small jar, shake well and add to the vegetables. 

Mix well and enjoy!
