veggie bowl with goat feta

Ingredients

  • 1/4 cup Brussels sprouts, roasted or steamed


  • 1/4 cup roasted yam


  • 1/2 cup cooked quinoa


  • 1/2 cup of stacked cabbage salad (see recipe)


  • 1/4 cup goat feta, crumbled on top


Optional

  • 1/2 avocado, chopped into cubes
  • garlic stuffed green olives

Directions

 

1. Place roasted Brussels sprouts, yam, and quinoa in a bowl.  


2. Add the stacked cabbage salad.


3. Top with chopped avocados and crumbled goat feta, and garlic stuffed green olives.  

Dig in and enjoy!
